Aubrey Allen

Aubrey Allen has been serving the Warwickshire public the finest meat since 1933. We carefully select and inspect all of our suppliers and can trace our meat from farm to plate.

We’re renowned for our meat, including granite grassland reared Cornish lamb, corn-fed Loire Valley hens, and free-range pork produced by Pig Farmer of the Year Jimmy Butler.

But we built our reputation on the quality of our beef, sourcing only the finest Highland cattle. Some of it even comes from Ballindaloch Castle itself, home to the oldest Angus herd of all, where the cattle graze on ancient pastures, drink pure Highland water, and come winter time feed on the barley draff from local distilleries. We leave our beef to hang on the bone for as long as three or four weeks and the result is the tastiest, most tender beef around.

Channel Fisheries

We are one of the UK’s leading coastal suppliers of quality fresh fish and seafood. Based in the beautiful fishing port of Brixham and established in 1981 we now supply many of Britain’s foremost chefs and caterers.

Our customer base includes Michelin starred restaurants, major London hotels and dining clubs, independent hotel chains, food halls, private homes and food led pubs.

We source all of our local fish daily from the day boat fleets at Brixham, Plymouth and Looe, with speciality products sourced from Scotland, Brittany and Rungis market in Paris.

Huntsham Farm

Huntsham Farm - Pedigree Meats is owned and run by Richard Vaughan and his wife, Rosamund. It specialises in producing the finest meat from rare pedigree animals – Longhorn beef, Middle White pork and Ryeland lamb – rather than just beef, pork and lamb. Huntsham Farm is situated in the beautiful Wye valley and has been in the Vaughan family for nearly four hundred years.

The Denham Estate

The Denham Estate occupies 1200 acres of picturesque Suffolk countryside with a herd numbering up to 3000 Fallow deer which have inhabited this region since their introduction in Norman times.

The Denham Herd is internationally recognised as one of the elite fallow deer herds of the world.

It is the largest herd in Europe and is acknowledged as a leading example of deer farming undertaken in keeping with the foremost principles of animal welfare and good husbandry.

The Live Langoustine Company

The Live Langoustine Company was formed in august 1996.

Based in the western isles of Scotland LLC have tanks on the island of Benbecula, also known as the dark island, just 50metres from the sea where the “Minch” runs through to the North Atlantic. All our langoustines are creel (pot) caught which is considered to be the most conservation minded and sustainable system of fishing.

Langoustines are sometimes referred to as “the rabbits of the sea”; they live in burrows on the sea bed and only come out for something to eat.

Once caught they are kept separated and graded (any small ones being returned to the sea to live for another day) in a sea tank on the boat until they are landed.

They then go direct into our tanks in a cool, dark environment which replicates there natural habitat for 24 hrs. This removes any stress that my have built up during the catching.

When packed, only the strong alive are selected so that we can be certain they will survive the journey arriving in our customers kitchens in peak condition.

We have been the founders of using the tube method of transportation. Each individual langoustine is in a separate tube in a poly box kept at 3DegC which again replicates their burrow.

Because we only do langoustines we do it right and we pay attention to detail at every stage of the process, from Sea bed to Chefs Kitchen.

In London we have a reputation which is second to none.

We are busy implementing our next development, sea tanks in London. We will bring the langoustines down in sea water tanks and decant them into tanks in London along with the water from “the cool clear Minch”. This will mean that the langoustines are not in a “dry” burrow on the journey south.

 



Yorkshire Game

Yorkshire Game supplies fresh game and specialist foods to the catering trade, operating from an EC export licensed plant in North Yorkshire.

Venison, Grouse, Pheasant, Partridge, Wild Duck, Woodpigeon, Hare and Rabbit are our most popular products. Most other game species can be sourced on request.

We supply a wide range of customers in England, Europe and beyond with fresh venison and game birds. We supply specialist foods to wholesalers, butchers and chefs in the North of England.

Damian Allsop

Damian supplies an exciting range of original hand made original chocolates and chocolate work to quality hotels, fine-dining restaurants and select delicatessens.

Damian’s unique water-based ganache gastronomic ‘CH2OCOLATE’ has removed the lactic flavour to create a purer intense flavour together with a lighter, fresher sensation.

Portland Shellfish

We were established in 1997 and are based in Portland, West Dorset near Weymouth.

Our key business has been built on the sourcing and supply of Live and Freshly Cooked Shellfish to the many sectors of the Restaurant, Hotel and Catering industry.

This has mainly been based on four products which are Creel caught Langoustines, Hand Dived King Scallops, Freshly Prepared White and Brown Crab Meat and Native Lobsters. What has been evident throughout our development is that Chefs are looking for both consistent premium quality and continuity of supply; we have been able to provide both.

Over the years we have specialized in the production and distribution of Crabmeat.

The Crab that we pick from (Cancer pagurus) generally comes from the Devon, Dorset and Cornwall coast and is from a sustainable source. No Juveniles are picked, they are returned to the sea, the average age is 4-6 years.
